The most iconic Sichuan dish — a bubbling, fiery broth loaded with tripe, duck intestines, beef, and vegetables. Must-order: fatty beef slices, tripe (maodu), duck intestines (yachang), and yellow throat (huanghou). The mala (numbing-spicy) flavor is addictive.

4) Fuqi Feipian (Sliced Offal in Chili Sauce)

A beloved Sichuan appetizer — thinly sliced beef and offal drenched in fragrant chili oil. Despite the name, it contains no lungs — just pure, spicy deliciousness.
